8 ozpkg. penne pasta, uncooked
1 csliced mushrooms
3/4 ccanned diced tomatoes, drained
5 Tbspolive oil
10 ozpkg. fresh spinach
3 Tbspbalsamic vinegar, or more to taste
8 ozpkg. crumbled feta cheese

- Cook pasta according to package directions; drain.
Meanwhile, in a skillet over medium-high heat, saute mushrooms and tomatoes in olive oil until mushrooms are tender. Lower heat to medium; add spinach and balsamic vinegar. Cook, stirring often, for a few minutes until spinach cooks down.
Mix in feta cheese and pasta.
