asian inspired peanut noodles

This is a go-to recipe for me when I'm hungry and short on time. Plus it can even be a main dish or appetizer for company.

Ingredients

  • 4 ounces linguini, uncooked
  • 1 - red bell pepper thinly sliced
  • 3 ounces snow peas
  • 1/2 cup scallion sliced 1/4 inch
  • PEANUT DRESSING
  • 3 cloves garlic minced
  • 2 teaspoons fresh ginger minced
  • 1/4 cup creamy peanut butter
  • 1/4 cup rice wine vinegar
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon sugar
  • GARNISH
  • 2 tablespoons chopped peanuts (i like dry roasted)
  • 1/3 cup cilantro leaves

How To Make asian inspired peanut noodles

  • Step 1
    Cook pasta according to package directions. About one minute before pasta is scheduled to be done add snow peas. Cook another minute. Drain pasta and peas and rinse with cold water. Add red pepper and scallions to cooled pasta mixture.
  • Step 2
    In separate bowl add all ingredients for the dressing. Whisk dressing ingredients together and pour over pasta mixture. Toss and place pasta mixture in soup bowls or lettuce leaves for a lighter fare. Garnish with peanuts and cilantro.
  • Step 3
    This dish tastes like the real thing! Just like you'd get at an Asian restaurant. To stretch the dish, add bean sprouts. You won't be disappointed.
