asian essentials: noodles & pasta sauce
I played about with this recipe over the course of the last few months. Playing with the ingredients, stepping away, then coming back to it a week or so later. This is my final solution… it works great on Asian noodles or pasta. Just toss the sauce with the noodles or pasta (a little goes a long way). I like to add things, like chopped tomatoes, with maybe, some seasoned ground chicken or pork. Have fun with it. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 3 tablespoons sesame paste
- 3 filtered water
- 1 tablespoon peanut butter, smooth variety
- 1 - 2 cloves garlic, minced
- 3 - 4 tablespoons tamari sauce, or liquid aminos
- 2 tablespoons rice vinegar
- 1 tablespoon white pepper, freshly ground
- 1 tablespoon Sriracha sauce
- sugar, to taste

Step 2Peanut Butter I am using a smooth variety, but you could use chunky, for a different mouth feel. Garlic Raw garlic packs a punch, I would recommend using 1 clove and see if you like it. You can always add another clove, but you cannot take it away, if it is too intense. In addition, the garlic will increase in intensity as the sauce ages. Tamari Sauce, or Liquid Aminos You could use a lite soy sauce, but I prefer the flavor notes of tamari, or liquid aminos. Plus, those items are gluten free. Bringing the Heat The heat comes from the white pepper and sriracha, so you might want to experiment with a bit at a time, until you achieve the desired results. The white pepper brings a sweet heat; while the sriracha, adds Asian heat. The Sugar The white sugar is very important to this recipe, and help to blend the flavors and eliminate any bitter taste. In a recipe like this, I usually add about 1 teaspoon. Do not leave the sugar out.

Step 3Gather your Ingredients (mise en place).

Step 4Whisk the sesame paste, peanut butter and water in a bowl until combined.

Step 5Then mix in the remainder of the ingredients, and whisk until smooth.

Step 6The sauce should be thick enough to coat the back of a spoon.

Step 7Store in the fridge, in a non-reactive container, until ready to use.

Step 9I like to use a bit and toss it into Asian noodles, or pasta. Top with some ground chicken or beef. Or you can just eat the noodles and sauce by themselves. Enjoy.
