This is a simple to make yet very tasty dish! I improvise a bit and add extra garlic, cheese, artichoke hearts and capers. My family and friends are always asking me to make this dish. It's always a hit!!

Ingredients

  • 1/4 c
    olive oil, extra virgin
  • 1/4 c
    butter (1/2 a stick)
  • 1 Tbsp
    flour
  • 1 c
    chicken broth
  • 2
    cloves garlic (chopped)
  • ·
    kosher salt and white pepper to taste
  • 1 Tbsp
    lemon juice
  • 1 can(s)
    artichoke hearts (rinced and drained)
  • 2 Tbsp
    grated parmesan cheese
  • 2 tsp
    capers (rinsed and drained)
  • 1 lb
    linguine, cooked

How to Make Artichoke Linguine

Step-by-Step

  1. Boil pasta according to directions.In the meantime, melt the 1/4 cup of butter with the 1/4 cup of oil in a small saucepan over medium heat. Add the flour and stir until smooth, about 3 minutes. Blend in the broth, stirring until thickened, about 1 minute.Reduce heat to low. Add the garlic, lemon juice, salt and pepper. Cook 5 minutes, stirring constantly. Blend in the artichokes, capers and the 2 tbsp of parmesan cheese.Cover and simmer over low heat for about 8 minutes.
