artichoke linguine

This is a simple to make yet very tasty dish! I improvise a bit and add extra garlic, cheese, artichoke hearts and capers. My family and friends are always asking me to make this dish. It's always a hit!!

Ingredients

  • 1/4 cup olive oil, extra virgin
  • 1/4 cup butter (1/2 a stick)
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 2 - cloves garlic (chopped)
  • - kosher salt and white pepper to taste
  • 1 tablespoon lemon juice
  • 1 can artichoke hearts (rinced and drained)
  • 2 tablespoons grated parmesan cheese
  • 2 teaspoons capers (rinsed and drained)
  • 1 pound linguine, cooked

How To Make artichoke linguine

  • Step 1
    Boil pasta according to directions.In the meantime, melt the 1/4 cup of butter with the 1/4 cup of oil in a small saucepan over medium heat. Add the flour and stir until smooth, about 3 minutes. Blend in the broth, stirring until thickened, about 1 minute.Reduce heat to low. Add the garlic, lemon juice, salt and pepper. Cook 5 minutes, stirring constantly. Blend in the artichokes, capers and the 2 tbsp of parmesan cheese.Cover and simmer over low heat for about 8 minutes.
