Ingredients
- 2 tablespoons brown mushroom gravy
- 1 - onion, finely chopped
- 1 - green bell pepper, diced
- 2 - garlic cloves, minced
- 2 tablespoons chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon cumin
- 32 ounces tomatoes
- 15 ounces kidney beans, canned
- 8 ounces macaroni, dry
- 2 ounces monterey jack cheese, grated
- 10 ounces corn, frozen
- 2 tablespoons vegetable oil

Step 1Chop the onion and green pepper.

Step 2Drain and rinse the canned beans.

Step 3Cook macaroni per instructions and drain.

Step 4In a large skillet heat oil over medium high heat.

Step 5Add onion, green pepper, garlic, chili powder, salt and cumin; saute for about 4 minutes until vegetables are tender.

Step 6Stir in the tomatoes (undrained) breaking them with a spoon.

Step 7Add kidney beans and corn (already thawed); bring to a boil.

Step 8Reduce heat to simmer and continue cooking for 15 minutes stirring occasionally.

Step 9Toss in cooked macaroni.

Step 10Sprinkle with the shredded cheese.
