Ingredients
- 8 ounces angel hair pasta
- 1 medium shallot, chopped
- 1/2 cup butter
- 1 tablespoon dried tarragon
- 2 tablespoons lemon juice
- 1 cup ricotta cheese
- salt and pepper
- lemon zest, for garnish
How To Make angel hair pasta with ricotta & lemon zest

Step 1Add the pasta to salted boiling water. Cook about 10 to 15 minutes. Meanwhile, add the shallots, butter, tarragon, lemon juice, and ricotta cheese into a food processor and process until smooth.

Step 2Drain the pasta, reserving 1/4 cup pasta water. Add the pasta back to the pot and stir in the cheese mixture with the pasta water. Season with salt and pepper to taste. Serve with lemon zest on top.
