Ingredients

  • 1 pound angel hair pasta
  • 1/4 cup panko bread crumbs
  • 1 tablespoon plus 1/4 cup olive oil, divided
  • 1/4 cup colatura
  • 2 cloves garlic, minced
  • 1/4 cup chopped Italian parsley
  • 2 teaspoons grated lemon zest
  • salt and pepper, to taste

How To Make angel hair pasta with colatura

  • Step 1
    Cook the angel hair in salted boiling water. In a small skillet, add the Panko and 1 Tbsp olive oil and cook until browned. Set aside.
  • Step 2
    In a large bowl, add the colatura and garlic. Drizzle in the remaining olive oil, whisking the whole time. Add 2 Tbsp of pasta water. Keep whisking to make a sauce. Add 1/2 cup pasta water and parsley and whisk some more. Drain the pasta. Add the pasta to the bowl and toss to coat the pasta with the sauce.
  • Step 3
    Stir in the breadcrumbs and lemon zest. Taste to adjust for salt and pepper.
