Ingredients
- 1 medium onion, diced
- 1 large green pepper, diced
- 2 teaspoons thyme
- 1 teaspoon basil
- 1 tablespoon parsley
- 1 pound ground beef
- 3 cans diced tomatoes - 14 oz can
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 tablespoons butter
- 1 pound elbow or shell macaroni-medium size shells if using

Step 1Dice the onion and green peppers..not super fine just small chunks. Place butter in a pot and brown ground beef til cooked thru. Add the diced onions/peppers and continue to cook til they start to soften. Add tomatoes and seasonings...taste at this point to adjust seasonings to your liking. Let simmer 1-1 1/2 hours on low heat. *Or you can do all day in crock pot!* Just brown the meat/veggies then throw all in crock pot and cook on low 5 hrs.

Step 2Cook Macaroni according to package directions, until al dente. Drain Macaroni, DO NOT RINSE! Add macaroni to pot of sauce and mix thoroughly. Ladle up in bowls! YUM!

Step 3Serve with a nice salad, some crunchy italian bread and grated cheese of your choice on top! This is some really good comfort food!!!
