This is absolutely the best Bolognese I have ever made. It takes about 5 hours from start to finish but so worth it. Hands down the best.

Ingredients

  • 1 large onion rough chop
  • 2 large carrots rough chop
  • 4 ribs celery rough chop
  • 8 cloves garlic
  • 2 tablespoons olive oil
  • Kosher salt
  • 3 1/2 pounds ground beef. chuck, sirloin, round or brisket
  • 2 1/2 cups tomato paste
  • 3 cups good red wine
  • water
  • 4 bay leaves
  • 1/4 cup sugar
  • 1 bunch thyme tied in a bundle
  • 2 tablespoons Sherry Vinegar
  • 2 pounds spaghetti or any pasta you want
  • 1 cup Parmigiano-Reggiano, grated

How To Make all day bolognese with pasta

  • Step 1
    Place the onions, carrots, celery, and garlic in a food processor. Process until it is a loose paste. Keep stopping and scraping the sides to get it really pureed to a paste.
  • Step 2
    Add oil to a large pot or Dutch Oven. Add the pureed veggies to the pan and season generously with salt. Cook over med. high heat for 20 minutes. You want it to get nice and brown but not black. Be patient.
  • Step 3
    Add the ground beef and season again with plenty of salt. Brown the meat for about 20 minutes. Keep stirring and get it brown but not black. If there is a lot of grease drain most of it. Stir in the tomato paste again cook and brown for 20 minutes. Add the red wine and bring to a boil and reduce to simmer for 10 minutes.
  • Step 4
    Add water to cover the meat. Throw in the bay leaves, thyme bundle and sugar. Bring to a boil and reduce to a simmer and simmer 3 hours stirring every once in a while and add more water if it gets too thick.
  • Step 5
    in the last 20 minutes cook the pasta in boiling salted water for 15 minutes. Add 1 cup of pasta water to the Bolognese and stir in the vinegar. Add the pasta to the sauce and cook 5 minutes. Serve with freshly grated Parmesan and drizzle with olive oil if desired.
