Ingredients
- 12 ounces linguine
- 4 tablespoons olive oil
- 1 medium onion, diced
- 8 ounces fresh mushrooms, sliced
- 6 cloves garlic, minced
- 10 bunches fresh spinach
- 1 jar artichoke hearts (14 oz), drained and chopped
- 3/4 cup heavy cream
- 16 raw shrimp, peeled and deveined
- 2 cups ricotta cheese
- 2 cups grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- salt and pepper
- basil or parsley, chopped, for garnish
How To Make 3 cheese linguine w shrimp, artichokes, & spinach

Step 1Boil salted water and add the linguine to cook. In a large saucepan, add the olive oil. Add the onion and mushrooms. Cook for about 6 minutes. Add the garlic and cook 1 more minute.

Step 2Add the spinach and artichokes, letting the spinach wilt and shrink. Add the heavy cream and shrimp. Add a ladle of the pasta water to the pan, then drain the pasta.

Step 3Stir in the cheeses and cook until melted. Stir in the linguine and serve.
