Ingredients
- 6-8 cups zucchini
- 1 - onion ...chopped
- 1 1/2- 2 pounds hamburger
- 1/2 teaspoon garlic powder
- 1 teaspoon oregano
- 1 cup cream of mushroom soup
- 1 1/4 cups instant rice
- 2 cups cottage cheese
- 1 cup grated sharp cheddar cheese
How To Make zucchini rice casserole

Step 1cook zucchini until just tender...drain saute meat..onion..garic powder oregano ..salt..rice.. mix meat mixture with the condensed soup... layer in 9x13 pan with zucchini...meat mixture...cottage cheese..cheddar cheese repeat 2nd layer....Bake at 350 for 45 to 50 min

Step 2Added note...you can also layer rice by itself after the meat mixture...it works both ways....
