zucchini mushroom fritata

This dish was a big hit for the vegetarians on the ship I worked on. They loved it because it was filling.

Ingredients

  • 6 cups zucchini, diced
  • 2 cups mushrooms, sliced
  • 2 small onions, minced
  • 2 - cloves garlic, minced
  • 8 - egg
  • 2 cups bisquick
  • 1/2 teaspoon each salt and pepper
  • 1 cup oil
  • 2 cups jack or romano cheese ( i use pepper jack)

How To Make zucchini mushroom fritata

  • Step 1
    Saute zucchini,onions and garlic until half cooked. Place in mixing bowl.
  • Step 2
    Beat eggs and add salt and pepper and add to zucchini mixture alternately with Bisquick.
  • Step 3
    Add oil and cheese and mix well
  • Step 4
    Pour into greased 9x13 pan and bake 30 to 40 minutes at 350* or until done.
