This dish was a big hit for the vegetarians on the ship I worked on. They loved it because it was filling.

6 c
zucchini, diced
2 c
mushrooms, sliced
2 small
onions, minced
cloves garlic, minced
2 c
1/2 tsp
each salt and pepper
1 c
2 c
jack or romano cheese ( i use pepper jack)

How to Make Zucchini Mushroom Fritata


  • 1Saute zucchini,onions and garlic until half cooked. Place in mixing bowl.
  • 2Beat eggs and add salt and pepper and add to zucchini mixture alternately with Bisquick.
  • 3Add oil and cheese and mix well
  • 4Pour into greased 9x13 pan and bake 30 to 40 minutes at 350* or until done.
