Ingredients
- 6 cups zucchini, diced
- 2 cups mushrooms, sliced
- 2 small onions, minced
- 2 - cloves garlic, minced
- 8 - egg
- 2 cups bisquick
- 1/2 teaspoon each salt and pepper
- 1 cup oil
- 2 cups jack or romano cheese ( i use pepper jack)
How To Make zucchini mushroom fritata

Step 1Saute zucchini,onions and garlic until half cooked. Place in mixing bowl.

Step 2Beat eggs and add salt and pepper and add to zucchini mixture alternately with Bisquick.

Step 3Add oil and cheese and mix well

Step 4Pour into greased 9x13 pan and bake 30 to 40 minutes at 350* or until done.
