my whole family loves this dish i can remember growing up in the country and having oxtails on saturday evenings for dinner oh how i miss those days!

Ingredients

  • 3 pounds oxtails (cut up)
  • - all purpose flour for dredging
  • 3 tablespoons vegetable shortening
  • 14 - onions, small white
  • 1 - bay leaf
  • 1 cup mushrooms, fresh
  • - salt &pepper
  • 1 cup sliced carrots
  • 1 - clove garlic minced
  • 2 cups dry red wine'beef stock or consomm'e

How To Make yummy oxtails

  • Step 1
    preheat oven to 350*roll oxtails in flour seasoned with salt and pepper
  • Step 2
    brown the meat in the shortening in a hot skillet and transfer to a casserole dish for baking
  • Step 3
    add carrots,onions &garlic to the pan and brown well
  • Step 4
    transfer this to the casserole and add the wine and seasonings.add enough beef stock to barely cover and sprinkle with salt and pepper
  • Step 5
    cover and bake for 3hrs.or until meat is tender
  • Step 6
    saut'e the mushrooms in butter and add to the casserole the last 30 min.of cooking
