How To Make york ymca (pa) dutch bean soup, barb

    Wash beans, place in large kettle and cover with 2" water. Add 1 T salt. Soak overnight, drain in morning.

    Add 2 qt water and ham hocks or ham. Bring to boil. Simmer slowly for 5 hours.

    Add: 1 large chopped onion 1 # 2 1/2 can (3 1/2 c) tomatoes Season with: 1 t chili powder juice of 1 lemon salt and pepper if desired

    Remove ham hocks. Cut up ham and add to above. Simmer slowly 1 hour more. Serve with crackers and salad.
