How to Make York YMCA (PA) Dutch Bean Soup, Barb
- Wash beans, place in large kettle and cover with 2" water. Add 1 T salt. Soak overnight, drain in morning.
- Add 2 qt water and ham hocks or ham. Bring to boil. Simmer slowly for 5 hours.
1 large chopped onion
1 # 2 1/2 can (3 1/2 c) tomatoes
1 t chili powder
juice of 1 lemon
salt and pepper if desired
- Remove ham hocks. Cut up ham and add to above. Simmer slowly 1 hour more. Serve with crackers and salad.
