wild duck gumbo
This is 1 of the many recipes that I have developed over my lifetime of outdoor life.

Ingredients
- 2/3 cup vegetable oil
- 2/3 cup all purpose flour
- 1 pound smoked sausage, sliced
- 2 cups onion, chopped
- 1 cup bell pepper, chopped
- 2 tablespoons parsley
- 1 tablespoon minced garlic
- 2 - wild ducks, cut into serving pieces
- 2 quarts water
- 3 1/2 teaspoons salt
- 1 1/2 teaspoons black pepper
- 1/4 teaspoon red pepper
- 1 pound stewed tomatoes
- 1 teaspoon thyme
- 2 - bay leaves
- 3 tablespoons file powder
- 2 tablespoons worcestershire sauce
How To Make wild duck gumbo

Step 1Brown duck pieces in hot oil.

Step 2Remove from heat.

Step 3Mix oil and flour to make a roux.

Step 4Cook over medium heat until dark brown.

Step 5Add sausage and the next 4 ingredients to the roux.

Step 6Cook 10 minutes over low heat, add 1/2 cup water, duck pieces, and all seasonings.

Step 7Mix well.

Step 8Add the remaining water, and simmer until the duck is tender.

Step 9Remove duck with a slotted spoon to remove the bone.

Step 10Return duck to gumbo.

Step 11Add the file powder and simmer 5 minutes.

Step 12Serve over rice.
