These are really good. The sauce is rich and flavorful. You can make the white bean "meat"balls ahead of time and just throw everything together when it's time to cook dinner.

Ingredients
- WHITE BEAN "MEAT"BALLS
- 2 cans white beans, rinsed and drained
- 2/3 cup plain breadcrumbs
- 2 large eggs
- 1 small onion, minced
- 1 clove garlic, minced
- 2 tablespoons fresh chopped parsley
- 1 teaspoon ground cumin
- 3/4 teaspoon salt
- ground black pepper, to taste
- 1/4 cup extra virgin olive oil
- ONION-WINE SAUCE
- 1 small onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons all purpose flour
- 1 teaspoon dried thyme
- 3/4 cup dry white wine
- 1 1/2 cups vegetable broth
- fresh chopped parsley, to garnish
How To Make white bean "meat"balls with onion-wine sauce

Step 1Add the white beans into a food processor. Blitz until well mashed then pour into a mixing bowl.

Step 2Add in breadcrumbs, eggs, onion, garlic, parsley, cumin, salt, and pepper. Combine with hands or wooden spoon until well mixed together into a paste like texture.

Step 3Shape into tightly packed balls.

Step 4Heat olive oil in a nonstick pan and brown meatballs evenly on all sides. Remove to a plate; keep warm.

Step 5To make the sauce, add the onions to pan drippings over medium heat and start to cook. When onions are translucent and starting to brown, add in garlic.

Step 6When the onions are starting to brown, add flour and cook about 2 minutes.

Step 7Add in white wine, thyme, and salt and pepper to taste. Stir around to mix. Reduce heat to simmer and reduce about 6 minutes. Add vegetable broth. Cook 6 minutes more or until you end up with a slightly creamy sauce.

Step 8Add meatballs back into pan in a single layer. Cook 2-3 minutes longer, or until the meatballs are incorporated and heated through.

Step 9Remove from heat. To plate: transfer some of the meatballs onto a plate and ladle some sauce over the top. Garnish with fresh parsley.

Step 10Serve with rice, roasted potatoes or just some crusty bread and a fresh green vegetable!
