WHAzzis? Good question. I was fooling around in the kitchen this afternoon and came up with this. This is how I made it. In comments I will tell you how I would do it a bit differently. As you can see in the photo, it has been tested!!

Ingredients

  • 3/4 cup cornmeal
  • 1 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/3 cup oil
  • 2-3 tablespoons cajun or creole seasoning.
  • 1 cup milk
  • 3 - eggs
  • 8 ounces smoked sausage
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup diced green onions
  • 1 - small can mushrooms
  • - garlic powder, to taste
  • 1 cup sharp cheddar cheese
  • 1 - 8 oz can tomato sauce
  • 2 cups hash browns, o'brien style, diced not shredded.

How To Make whazzis?

  • Step 1
    Preheat ovemn to 350. Spray a 9X13 casserole.
  • Step 2
    Mix potatoes, peppers, onions and mushrooms, sausage, sprinkle with garlic powder. Place in casserole dish and put in oven for about 120 minutes.
  • Step 3
    Mix all dry ingredients.
  • Step 4
    Beat eggs and oil together, Add to dry ingrediernts. Add Milk and tomato sauce. Mix well. Pour batter over veggie/sausage mix.
  • Step 5
    Bake approx 35 minutes until a rteswter comes out clean. Turn off oven. Sprinkjle the cheese ovfer, place back into oven till cheese melt.
  • Step 6
    When I make again, I will increase thesausage to 1 LB, the ppers and green onions to 1/2-3/4 cups. The cajun or creole seasoning to 3 tbsp. O'brien potatoes to 3 cups.
  • Step 7
    Hint: You can make your own o'briens by running potatoes thru a french fry cutter then dicing. Increase the peppers and onions to 1 cup if you do. You can also add diced green chiles or jalapenos. Serve with salsa if wanted. Let me know how you tweak this recipe.
