WHAzzis? Good question. I was fooling around in the kitchen this afternoon and came up with this. This is how I made it. In comments I will tell you how I would do it a bit differently.
As you can see in the photo, it has been tested!!
Mix potatoes, peppers, onions and mushrooms, sausage, sprinkle with garlic powder. Place in casserole dish and put in oven for about 120 minutes.
Mix all dry ingredients.
Beat eggs and oil together, Add to dry ingrediernts.
Add Milk and tomato sauce. Mix well. Pour batter over veggie/sausage mix.
Bake approx 35 minutes until a rteswter comes out clean. Turn off oven. Sprinkjle the cheese ovfer, place back into oven till cheese melt.
When I make again, I will increase thesausage to 1 LB, the ppers and green onions to 1/2-3/4 cups.
The cajun or creole seasoning to 3 tbsp. O'brien potatoes to 3 cups.
Hint: You can make your own o'briens by running potatoes thru a french fry cutter then dicing.
Increase the peppers and onions to 1 cup if you do.
You can also add diced green chiles or jalapenos.
Serve with salsa if wanted. Let me know how you tweak this recipe.
