weight watchers friendly sausage and peppers

I entered this into the Weight Watchers recipe builder and got 5 points per serving. Originally, I was going to add some Italian seasoning and some fresh basil but after tasting it, I decided it was fantastic all on it's own. This would be very good with pasta or quinoa. We just had it the way it was and loved it. I don't remember what size package I used for the sausage but there were 5 links. I found them in the frozen meat section. They were NOT pre-cooked.

Ingredients

  • 1 package alfresco chicken sausage- italian style
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 medium sweet onion
  • 1 can tomatoes, canned italian style with juice
  • 2 cloves garlic

How To Make weight watchers friendly sausage and peppers

  • Step 1
    Spray a large non-stick pan with olive oil or Pam. Remove sausage from casing and add to pan. Brown sausage and break up into pieces using a wooden spoon. When cooked through, remove from pan and set aside.
  • Step 2
    While sausage is cooking, slice peppers and onion. Using a large knife, crush garlic.
  • Step 3
    Add peppers, onion and garlic to pan and cook until tender crisp.
  • Step 4
    Return sausage to pan and add un-drained tomatoes.
  • Step 5
    Bring to a simmer, cover and cook until veggies are done. Uncover and cook until liquid has reduced to half or more, depending on how much liquid you prefer.
