2 lblamb shanks
2 Tbspolive oil
2 smallcarrots, diced
2 stalk(s)celery, diced
4 cburgundy wine
How to Make Vic and Mick's Lamb Shanks
- Preheat oven to 325ºF to cook the shanks for 1 1/2 hours or 300ºF to cook for 2 1/2 hours.
- Brown shanks in olive oil. Place in roasting pan. Add the rest of the ingredients.
- Add burgundy to about 1-inch deep. Cover; roast according to the oven temps above.
- Remove the shanks and keep warm. Discard the vegetables. Reduce drippings for sauce.
