This is 1 of the many recipes that I have developed over my lifetime of outdoor life.

Ingredients

  • 1 - venison roast
  • 1 - celery stalk, cut into small slivers
  • 3 - cloves garlic, sliced thinly
  • 1 - onion, sliced
  • 6 slices bacon
  • - seasoning salt
  • - black pepper, freshly ground
  • 2 cans (10 3/4 ounce) cream of mushroom soup
  • - cooked mashed potatoes

How To Make venison roast with gravy

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Punch several holes in both sides of roast.
  • Step 3
    Slide celery and garlic into the holes.
  • Step 4
    Place in a roasting pan, and top with onion.
  • Step 5
    Cover onion with bacon slices.
  • Step 6
    Sprinkle with salt and pepper.
  • Step 7
    Bake covered 20 - 25 minutes per pound.
  • Step 8
    Remove from oven 30 minutes before roast is done.
  • Step 9
    Add the mushroom soup around the sides of the roast.
  • Step 10
    Bake, uncovered, for 30 minutes.
  • Step 11
    Serve with mashed potatoes.
