unsalted butter
2 Tbsp
olive oil
1 medium
red onion
4 clove
4 Tbsp
dark brown sugar
3 c
dry red wine
4 Tbsp
red wine vinegar
4 Tbsp
tomato paste
4 c
beef stock
cayenne pepper
chili powder
chipotle in adobe sauce
2 lb
venison stew meat
2 c
black beans
sour cream
shredded cheese
fresh cilantro

How to Make Venison Chili


  • 1Melt butter and olive oil in large pot over medium heat. Stir in chopped onion and minced garlic.
  • 2Stir in brown sugar, red wine, vinegar, tomato paste, stock, chipotle & spices to taste. Simmer 30 minutes until mixture is reduced by half.
  • 3Meanwhile heat oil over medium high heat and brown stew meat. Stir in black beans. Transfer mixture to the simmering pot, mixing everything thoroughly. Simmer 1 hour until meat is tender.
    Garnish with fresh cilantro, sour cream and shredded cheese.
