Venison Chili

Season with as much or as little spices as youd like

2 Tbsp
unsalted butter
2 Tbsp
olive oil
1 medium
red onion
4 clove
4 Tbsp
dark brown sugar
3 c
dry red wine
4 Tbsp
red wine vinegar
4 Tbsp
tomato paste
4 c
beef stock
cayenne pepper
chili powder
chipotle in adobe sauce
2 lb
venison stew meat
2 c
black beans
sour cream
shredded cheese
fresh cilantro


1Melt butter and olive oil in large pot over medium heat. Stir in chopped onion and minced garlic.
2Stir in brown sugar, red wine, vinegar, tomato paste, stock, chipotle & spices to taste. Simmer 30 minutes until mixture is reduced by half.
3Meanwhile heat oil over medium high heat and brown stew meat. Stir in black beans. Transfer mixture to the simmering pot, mixing everything thoroughly. Simmer 1 hour until meat is tender.
Garnish with fresh cilantro, sour cream and shredded cheese.
