Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 medium red onion
  • 4 cloves garlic
  • 4 tablespoons dark brown sugar
  • 3 cups dry red wine
  • 4 tablespoons red wine vinegar
  • 4 tablespoons tomato paste
  • 4 cups beef stock
  • - cayenne pepper
  • - chili powder
  • 1 - chipotle in adobe sauce
  • 2 pounds venison stew meat
  • 2 cups black beans
  • - sour cream
  • - shredded cheese
  • - fresh cilantro

How To Make venison chili

  • Step 1
    Melt butter and olive oil in large pot over medium heat. Stir in chopped onion and minced garlic.
  • Step 2
    Stir in brown sugar, red wine, vinegar, tomato paste, stock, chipotle & spices to taste. Simmer 30 minutes until mixture is reduced by half.
  • Step 3
    Meanwhile heat oil over medium high heat and brown stew meat. Stir in black beans. Transfer mixture to the simmering pot, mixing everything thoroughly. Simmer 1 hour until meat is tender. Garnish with fresh cilantro, sour cream and shredded cheese.
