Ingredients
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 medium red onion
- 4 cloves garlic
- 4 tablespoons dark brown sugar
- 3 cups dry red wine
- 4 tablespoons red wine vinegar
- 4 tablespoons tomato paste
- 4 cups beef stock
- - cayenne pepper
- - chili powder
- 1 - chipotle in adobe sauce
- 2 pounds venison stew meat
- 2 cups black beans
- - sour cream
- - shredded cheese
- - fresh cilantro
How To Make venison chili

Step 1Melt butter and olive oil in large pot over medium heat. Stir in chopped onion and minced garlic.

Step 2Stir in brown sugar, red wine, vinegar, tomato paste, stock, chipotle & spices to taste. Simmer 30 minutes until mixture is reduced by half.

Step 3Meanwhile heat oil over medium high heat and brown stew meat. Stir in black beans. Transfer mixture to the simmering pot, mixing everything thoroughly. Simmer 1 hour until meat is tender. Garnish with fresh cilantro, sour cream and shredded cheese.
