veggie/sweet potatoe casserole

So delicious and full of flavor...sort of like a Shepard's Pie

Ingredients

  • 2 large portobello mushrooms, diced
  • 1 large carrots, cubed
  • 1 medium onion, diced
  • 1 bunch kale
  • 1/2 stick butter
  • 2 tablespoons cornstarch
  • 1 cup broth ( beef, chicken or mushroom)
  • - salt/pepper
  • 2 large sweet potatoes
  • 1/4 cup milk
  • 1/2 cup shredded cheese

How To Make veggie/sweet potatoe casserole

  • Step 1
    start by peeling and boiling sweet potatoes( about 10 mins)
  • Step 2
    In a large skillet,saute mushrooms, carrots, onions in butter...remove stem from kale and chop and add...also add the broth, in a small bowl make a paste with the cornstarch and some water...add to the mixture and bring to a boil, till thickened ( about a min) ....turn off heat.
  • Step 3
    mash the sweet potatoes, add 1/4 cup milk, set aside
  • Step 4
    in a casserole dish, add the veggie mixture... place the mashed sweet potatoes on top and top with shredded cheese (your taste) I use Monterey Jack)
  • Step 5
    broil until cheese bubbles ( about 5 mins)
