My mom made this when I was young, and my children and family love this, I hope you get as much enjoyment out of this as we do. You can add chicken or beef as well.

Ingredients

  • 2 packages california blend (frozen)
  • 4 cups instant rice (because it makes double)
  • 1 1/3 cans chambles cream of mushroom soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 packages colby monterrey jack cheese

How To Make veggie dish

  • Step 1
    Pre heat oven to 350.
  • Step 2
    Boil or steam your California blend veggies. Strain and set aside, while that is cooking get your instant rice done. Then mix the cream of mushroom soup and garlic and onion powder and rice together.
  • Step 3
    I use 2 bread pans but you can use a regular pan. I pat rice mix on bottom of pan and sides. Then put Veggie's in. And a layer of cheese on top of that, Then Rice again, Do as many layers as you can with rice and veggie's and cheese. Top with rice and cheese bake for 45 minutes or until golden brown and enjoy.
