It's a bit like a BLT... with peanut butter, which was a huge thing in my house growing up. Non-vegetarians even love this one!

Ingredients

  • 2 slices whole grain bread, lightly toasted
  • 3 slices tofu, firm (about 1/4 inch deep)
  • 3 - sun-dried tomatoes, diced
  • 3 - lettuce leaves
  • 2 tablespoons mayonnaise
  • 2 tablespoons peanut butter
  • - salt and pepper

How To Make vegetarian sun-dried tomato, peanut butter, and tofu sandwich

  • Step 1
    Lightly brown the tofu slices in a frying pan, or microwave with butter for 2 minutes. Salt and pepper to taste.
  • Step 2
    Spread peanut butter on toasted bread while still warm, sprinkling sun-dried tomato slices to melt in.
  • Step 3
    Next, place buttered and seasoned salt and pepper on sandwich, followed by lettuce and final toast slice smeared with mayonnaise.
  • Step 4
    Eat, and rejoice.
