Vegetarian sun-dried tomato, peanut butter, and tofu sandwich

It's a bit like a BLT... with peanut butter, which was a huge thing in my house growing up. Non-vegetarians even love this one!

  • 2 slice
    whole grain bread, lightly toasted
  • 3 slice
    tofu, firm (about 1/4 inch deep)
  • 3
    sun-dried tomatoes, diced
  • 3
    lettuce leaves
  • 2 Tbsp
  • 2 Tbsp
    peanut butter
  • ·
    salt and pepper

How to Make Vegetarian sun-dried tomato, peanut butter, and tofu sandwich


  1. Lightly brown the tofu slices in a frying pan, or microwave with butter for 2 minutes. Salt and pepper to taste.
  2. Spread peanut butter on toasted bread while still warm, sprinkling sun-dried tomato slices to melt in.
  3. Next, place buttered and seasoned salt and pepper on sandwich, followed by lettuce and final toast slice smeared with mayonnaise.
  4. Eat, and rejoice.
