It's a bit like a BLT... with peanut butter, which was a huge thing in my house growing up. Non-vegetarians even love this one!

Ingredients

2 slice
whole grain bread, lightly toasted
3 slice
tofu, firm (about 1/4 inch deep)

sun-dried tomatoes, diced
3
lettuce leaves
2 Tbsp
mayonnaise
2 Tbsp
peanut butter
salt and pepper

How to Make Vegetarian sun-dried tomato, peanut butter, and tofu sandwich

Step-by-Step

  • 1Lightly brown the tofu slices in a frying pan, or microwave with butter for 2 minutes. Salt and pepper to taste.
  • 2Spread peanut butter on toasted bread while still warm, sprinkling sun-dried tomato slices to melt in.
  • 3Next, place buttered and seasoned salt and pepper on sandwich, followed by lettuce and final toast slice smeared with mayonnaise.
  • 4Eat, and rejoice.
