vegetarian meatloaf

My kids are vegetarians, so I just eat mostly vegetarian. One day though, I was craving the comfort of meatloaf. This version is VERY close in flavor and texture. I kept tweaking and think I've finally found my favorite version. It has become a family and neighborhood favorite! Not to mention, it smells wonderful while cooking!

Ingredients

  • 1 - 16 0z packages boca meatless crumbles
  • 1 package any brand(i like gimme lean) vegetarian style ground sausage
  • 3 - eggs
  • 1 - small onion- diced
  • 1/2 cup celery- diced
  • 1 1/4 cups rolled oats
  • 3/4 cup your favorite bbq sauce
  • 1/2 cup ketchup
  • 1 teaspoon salt, pepper, and garlic(optional)
  • - if you don't like a sausage flavor in your meatloaf, this recipe can be done with just crumbles. if you use just one pkg, simply reduce other ingredient amounts.

How To Make vegetarian meatloaf

  • Step 1
    preheat oven to 375 degrees and spray or lightly grease a 9" pie plate/pan
  • Step 2
    Microwave Boca Crumbles for 2 minutes
  • Step 3
    In large bowl combine all ingredients, except the ketchup and mix well, you'll get plenty messy on this step!
  • Step 4
    Form mixture into a loaf shape in the Pie plate and top with ketchup.
  • Step 5
    Bake about 50-60 minutes, with an internal temp of atleast 160 degress. Remove and let stand atleast 30 minutes. Enjoy!
