Ingredients
- 2 cups water
- 1 cup brown lentils
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 3/4 teaspoon garlic powder
- salt and pepper, to taste
- TAHINI SAUCE
- 1/4 cup tahini
- 1-2 tablespoon fresh lemon juice
- 1/4 teaspoon garlic powder
- 1/3 - 1/2 cup plain yogurt (not Greek)
- TOPPINGS
- cucumber, tomatoes, olives and feta (optional)
- pita bread cut in half to fill with lentils
How To Make vegetarian lentil pita pockets with tahini sauce

Step 1Cook lentils in a saucepan along with carrots, onions, and spices. Bring to a boil, then cover and lower the temperature to medium-low. Simmer lentils for approximately 30 minutes or until water is absorbed.

Step 2Remove lentils from the heat, keeping them covered.

Step 3Combine tahini, lemon juice (to taste), and garlic powder.

Step 4Blend well and add yogurt, a little at a time, until the desired consistency is reached.

Step 5Add lentils to pita halves and top with your choice of toppings (tomatoes, cucumbers, feta, etc).

Step 6Drizzle with tahini sauce over the top.
