This recipe uses brown lentils as they hold up better than red. Top with your favorite veggies - cucumber, tomatoes, lettuce, or Feta cheese.

Ingredients

  • 2 cups water
  • 1 cup brown lentils
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 3/4 teaspoon garlic powder
  • salt and pepper, to taste
  • TAHINI SAUCE
  • 1/4 cup tahini
  • 1-2 tablespoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • 1/3 - 1/2 cup plain yogurt (not Greek)
  • TOPPINGS
  • cucumber, tomatoes, olives and feta (optional)
  • pita bread cut in half to fill with lentils

How To Make vegetarian lentil pita pockets with tahini sauce

  • Step 1
    Cook lentils in a saucepan along with carrots, onions, and spices. Bring to a boil, then cover and lower the temperature to medium-low. Simmer lentils for approximately 30 minutes or until water is absorbed.
  • Step 2
    Remove lentils from the heat, keeping them covered.
  • Step 3
    Combine tahini, lemon juice (to taste), and garlic powder.
  • Step 4
    Blend well and add yogurt, a little at a time, until the desired consistency is reached.
  • Step 5
    Add lentils to pita halves and top with your choice of toppings (tomatoes, cucumbers, feta, etc).
  • Step 6
    Drizzle with tahini sauce over the top.
