vegetarian cheesy stuffed peppers
I make this sometimes when wanting a meatless meal. It is pretty simple to make and can also be served with pasta noodles by plating noodles or pasta and top each plate with a stuffed pepper. I prefer the orange peppers but any color will work.

Ingredients
- 2 large peppers, halved and seeded
- 1/2 cup shredded cheese, your favorite kind, i prefer american
- 1 package frozen mixed vegetables, partially thawed
- 1/4 cup seasoned bread crumbs
- 1 tablespoon butter softened
- 1/2 teaspoon paprika
How To Make vegetarian cheesy stuffed peppers

Step 1Place cleaned peppers in a pot, cover with water, bring to a boil and boil 3 minutes

Step 2remove peppers and place in a sprayed baking dish, cut side up

Step 3Mix cheese and vegetables together and divide evenly between the 4 pepper shells (season with salt and pepper to your liking)

Step 4Mix bread crumbs with softened butter and sprinkle over each pepper, divided evenly Sprinkle with paprika

Step 5Bake in pre heated 400 degree oven 15 minutes or until vegetables are heated thru and crumbs are lightly browned.

Step 6Serve alone or over hot cooked pasta or steamed rice.
