These are tasty and versatile. They can be enjoyed for breakfast, lunch or dinner, and can be paired with just about anything. And Specific Carbohydrate Diet compliant, for those treating their IBD with the SCD. Easy to batch cook and always have on hand for people to grab when they are hungry. This recipe can always be adjusted to whatever seasoning your family prefers. The current recipe is savory, tasty, mild, and avoids many of the seasonings that are hard on some people with IBD, such as seed-based and nightshade (peppers) seasonings. If eggs are a sensitivity, they can be left out.

Ingredients
- 3 pounds ground turkey, 93% lean
- 2 finely chopped onions
- 3/4 cup granulated onion
- 1/4 cup granulated garlic
- 1/3 cup dried marjoram
- 1 teaspoon liquid smoke flavoring (optional)
- 2 1/2 - 3 teaspoons salt
- 6 large eggs
- 5 ounces shredded carrots
- some chopped mixed greens
- 1/3 - 1/2 cup olive oil

Step 1Mix all the ingredients together, adding the turkey last.

Step 2Preheat oven to 400 degrees F.

Step 3Line two extra-large Nordic Ware baking sheets (21 x 15”) with parchment paper. Form the turkey mixture into small, flat rounds, about 2-3 Tbsp worth of mixture each.

Step 4Bake at 400 degrees F for about 17-18 minutes, until thermometer inserted into the thickest parts reaches at least 165 degrees F. These do not need to be browned like I tend to like with other meats; they get burnt tasting quickly, and taste best with the best texture when not cooked to the point of browning much or any.

Step 5I freeze in 3 cup rectangular Pyrex dishes, and keep one defrosted in the fridge to have on hand at all times, to grab as a tasty snack or make a quick meal.

Step 6NOTE: For the ground turkey, Trader Joe’s carries some with ingredients: turkey and organic rosemary extract. For the granulated onion and granulated garlic, I use McCormick or Penzey’s. Check current scd compliance. For chopped mixed greens, I often use power greens, i.e., baby spinach, baby swiss chard, baby kale, etc.
