I love these and they are a nice change from your everyday hotdog on a bun.

Ingredients

  • 1 - avocado
  • 1 cup sour cream
  • 4 tablespoons diced red onion
  • 4 - flour tortillas-6 inch
  • 4 - all beef hot dogs
  • 4 - toothpicks
  • 1 cup shredded lettuce, divided
  • 1 - serrano pepper, seeded and diced
  • 1 cup fresh salsa, divided
  • 1 cup shredded pepperjack cheese, divided
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped cilantro-optional

How To Make tex-mex rabid dogs

  • Step 1
    In a large skillet over medium high heat, heat oil.
  • Step 2
    In a food processor blend together the peeled, pitted avocado and sour cream until smooth.
  • Step 3
    Lightly steam the tortillas so they don't break when you roll them.
  • Step 4
    Fry hot dogs in hot oil.
  • Step 5
    Lay the tortillas out side by side and place a hot dog on each one, not centered, closer to the edge.
  • Step 6
    Now place toppings next to hot dog. Avocado mayo, salsa, lettuce, serranos, onions, cheese.....
  • Step 7
    Holding onto the tortilla roll it over the hot dog and condiments-snug it in tight.
  • Step 8
    Seal with toothpick and repeat with remaining 3 hot dogs and tortillas.
  • Step 9
    Place in your hot skillet with remaining oil-turn often-you want them just toasted.
  • Step 10
    Serve with refried beans and Mexican rice.
