We love 'bowls' for dinner and the fact that they can be most anything you like. You can use fresh ingredients, but they are a great way to use up little bits of leftovers and turn them into something truly delicious and crave worthy. This is one of our favorites. It's a Teriyaki bowl and it can be made with chicken, pork or (our favorite), shrimp. The photo shows both a shrimp with rice and a chicken with noodles. Either way, it's a delicious, inexpensive, quick and easy meal. You will need 2 servings of cooked rice or noodles. Ramen noodles are quick and easy but thin spaghetti works.

Ingredients For teriyaki bowl

  • 1/2 c
    low sodium soy sauce
  • 1/2 c
    light brown sugar
  • 2
    servings cooked rice or noodles
  • chopped green onions
  • chopped cashews

How To Make teriyaki bowl

    Whisk the soy sauce and brown sugar together until well blended in a saucepan. Bring to a boil then reduce heat to simmer and cook until reduced and slightly thickened. NOTE: It's important that you use low sodium soy sauce because as this reduces it gets extremely salty with regular soy sauce. If desired, add some minced garlic to your sauce. Once it has reduced and is the consistency you like, remove from heat and keep covered.

    The remaining ingredients are completely up to you. Begin with your protein. Chicken cut into thin strips, pork cut into thin strips, shrimp that has been peeled and deveined can be cut or left whole, scallops are a very nice addition. All of those items can be fresh or leftovers. If they are fresh you will want to sear them and cook them until done.

    Vegetables can be anything you like. Some of our favorite combinations are cabbage - chopped or cut into thin strips, asparagus, peas (snow or sweet), water chestnuts, carrot, celery, onion etc. If you have leftover vegies they will work well. Just add what you enjoy as a combination.

    Once you've chosen your protein and vegies, they will need to be cooked if fresh. One everything has been cooked - which should only take moments - add them all - except for the rice or noodles - together in a saucepan. Pour some of the sauce over everything and simmer for a few minutes until warmed through.

    Place the rice or noodles into your bowls then top with the meat and vegie mixture. Ladle some of the warm Teriyaki sauce over all until you have the amount you desire. Lastly, garnish with chopped green onions and/or chopped cashews and serve hot.
