Ingredients
- 2 large sweet potatoes
- 1 pound ground beef
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 4 cloves garlic, minced
- salt and pepper
- 2 tablespoons tomato paste
- 1/4 cup water
- 1 cup shredded Mexican cheese
- 1 cup lettuce, chopped
- 2 tablespoons pico de gallo
- Mexican crema
How To Make taco stuffed sweet potato

Step 1Preheat the oven to 400 degrees F. Poke the potatoes and wrap in foil, and bake for about 1 hour until soft.

Step 2Add the ground beef to a saucepan and mix in the garlic, chili powder, cumin, salt, and pepper.

Step 3Once the beef is no longer pink, stir in the tomato paste and water. Cook until thickened.

Step 4Once the potatoes are cooked, cut them in half. Top with the beef mixture, then the cheese, lettuce, pico, and crema. Enjoy.
