Ingredients

  • 2 large sweet potatoes
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 4 cloves garlic, minced
  • salt and pepper
  • 2 tablespoons tomato paste
  • 1/4 cup water
  • 1 cup shredded Mexican cheese
  • 1 cup lettuce, chopped
  • 2 tablespoons pico de gallo
  • Mexican crema

How To Make taco stuffed sweet potato

  • Step 1
    Preheat the oven to 400 degrees F. Poke the potatoes and wrap in foil, and bake for about 1 hour until soft.
  • Step 2
    Add the ground beef to a saucepan and mix in the garlic, chili powder, cumin, salt, and pepper.
  • Step 3
    Once the beef is no longer pink, stir in the tomato paste and water. Cook until thickened.
  • Step 4
    Once the potatoes are cooked, cut them in half. Top with the beef mixture, then the cheese, lettuce, pico, and crema. Enjoy.
