taco meat tostada and an idea

For the first time in my life, I am cooking for only one. So I have become creative in prepping one meal and freezing a part to make another meal. A cube or two of frozen taco meat gives me a head start on my next Mexican meal. Just thaw and heat in a microwave.

Ingredients

  • 1 small onion, diced
  • 1/2 red pepper, diced
  • 1 pound 85% ground beef
  • 1/2 teaspoon seasoned salt
  • 1/3 cup taco seasoning, divided
  • 3/4 cup water
  • 1 teaspoon olive oil
  • 2 very small tortillas
  • 2 slices your favorite cheese (i used harvati)

How To Make taco meat tostada and an idea

  • Step 1
    Heat a skillet. Add diced onion and peppers. Stir-fry for 3 or 4 minutes until vegetables are wilted.
  • Step 2
    Add hamburger, salt and about a 1/3 of the taco seasoning. Stir until the meat is brown. Pour off grease and blot with a paper towel to soak up any fat.
  • Step 3
    Add water and let cook on low until water is absorbed.
  • A Ball silicone freezer container filled with taco meat.   (Container comes with a lid.)
    Step 4
    The Idea Part--Optional: Add any excess taco meat to a silicone sectioned freezer container and freeze. Store. the rest of the taco meat for your next meal
  • Step 5
    When you are ready to prepare a meal, add olive oil to a skillet or griddle large enough to hold 2 small tortillas. Heat on low and add the two tortillas separately. As the tortillas start to warm, turn them over and add your preferred cheese to each and your saved taco meat, warmed in micro if necessary, to one of the tortillas. Loosely cover the skillet with a large lid and let the cheese start to melt. Flip the tortilla with only cheese on top of the other. Cover loosely again and continue to heat until the cheese is melted and gooey. Serve with a vegetable. Eat and enjoy.

    Use the frozen taco meat cubes as you wish, but I make the tostadas often.
