sweet & sour pineapple pork

This simple Asian inspired recipe can be a delicious change from your everyday menu. Everyone in your family will enjoy it!

Ingredients

  • SWEET & SOUR SAUCE
  • 1/4 cup ketchup
  • 1 tablespoon hoisin sauce
  • 1 tablespoon fresh ginger, minced
  • 2 large cloves garlic, pressed
  • 2 tablespoons brown sugar, such as demerara
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon chili sauce, such as heinz®
  • 1/2 tablespoon worcestershire sauce
  • 1 cup unsweetened pineapple juice
  • 1 tablespoon cornstarch mixed with 1/3 cup cold water
  • STIR FRY
  • 1 pound pork, cut into 1-inch pieces
  • 1/8 teaspoon ground himalayan sea salt
  • freshly ground black pepper, to taste (i always use mixed peppercorns)
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil
  • 1/2 large white onion, cut into 1-inch pieces
  • 1 large carrot, peeled and sliced
  • 1 tablespoon sesame oil
  • 1/2 large red pepper, cut into 1-inch pieces
  • 1/2 large yellow pepper, cut into 1-inch pieces
  • 1/2 large poblano pepper, cut into 1-inch pieces
  • 1 teaspoon fresh ginger, minced
  • 1 small clove garlic, pressed
  • 2 cups pineapple chunks
  • 1/2 cup peanuts, unsalted (substitute cashews)
  • 1 large green onion, cut into 1/2-inch pieces diagonally, for garnish
  • sesame seeds, for garnish

How To Make sweet & sour pineapple pork

  • Step 1
    In a medium saucepan, combine all ingredients for the sweet & sour sauce except cornstarch; mix well. Bring to a boil and then add cornstarch mixture. Reduce heat to low and keep it warm.
  • Step 2
    In a medium bowl, place pork and season with salt and pepper. Dredge with cornstarch using a sieve; set aside.
  • Step 3
    In a wok over medium-high, heat olive oil. Add pork and sauté until almost half cooked. Add onions and sauté for 2 minutes. Add red, yellow and poblano peppers and sauté for another 2 minutes. Add carrots and sauté for 2 minutes. Add celery and sauté as well for 2 minutes. Add garlic and ginger; sauté for only 1 minute. Add pineapple chunks and sauté for 2 minutes. Add peanuts and sauté for 2 minutes.
  • Step 4
    Pour sweet & sour sauce over the pork mixture and reduce heat to medium-low. Let simmer for 3-5 minutes. Serve over cooked rice and garnish with green onions & sesame seeds
