sweet potato casserole
(1 RATING)
This is a very sweet, rich casserole as you can see from the ingredients. You may want to put in less sugar because it is so sweet. This is a request from our family when we are together. Some people like to eat this casserole as a desert. I made this for a family Christmas gathering. It was well received and there was none left.

How To Make sweet potato casserole
-
Step 1Preheat oven to 350 degrees. Grease a 13 x 9 casserole dish. Combine hot sweet potatoes, sugar, eggs, cream, cinnamon, nutmeg, and half of the butter in a bowl. Mix thoroughly with mixer until light and fluffy. Add mixture to the greased casserole. In another bowl, combine the Rice Krispie cereal, pecans, walnuts, brown sugar, and remaining butter. Mix until crumbly. Spread over sweet potato mixture. Bake 40-45 minutes. I use only pecans in the topping since I am allergic to walnuts and it is just as good. I also "pat down" the sides and make a small trench so it is not as likely to run over the sides.
