stuffin' muffins
We like using up every bit of our Thanksgiving feast, and this little recipe does exactly that with the little bits and pieces that aren't quite enough to make something substantial. We used to just make them in balls, but one time I popped them into the muffin tin on a whim and alla kazaam - Stuffin' Muffins! They don't take a lot of ingredients to make, and they are fun to eat. Equally as fun - make them tiny, roll into a ball, and bake on a cookie sheet - bite-sized yummy. So before you toss that tablespoon or so of leftovers, repurpose it into Stuffin' Muffins or Stuffin' Bites!

Ingredients
- leftover stuffing
- leftover mashed potatoes
- leftover turkey - chopped
- leftover turkey gravy
- cranberry sauce for garnish
How To Make stuffin' muffins

Step 1NOTE: You can put whatever leftovers you have inside these Stuffin' Muffins. If you are looking for a fun little appetizer, make them in a mini muffin pan or just roll them into tiny balls and bake on a parchment paper-lined baking sheet!

Step 2Preheat oven to 400 degrees F. Lightly spray or butter a 6-cup muffin tin and set aside.

Step 3Scoop about 1/3 cup of stuffing and roll into a ball. Flatten slightly in your hand and place a tablespoon or so of mashed potatoes and chopped turkey into the center.

Step 4Fold the sides up until you have a ball shape - be sure to cover the hole with a bit of stuffing and repeat until all 6 balls have been made.

Step 5Place the balls into the wells of your prepared muffin tin.

Step 6Press down lightly on each ball, then cover loosely with foil.

Step 7Bake for 17 minutes.

Step 8Remove the foil and bake for another 15 minutes or until warmed all the way through and the edges are crispy.

Step 9Remove from oven and allow to sit for a couple of minutes. While the muffins are cooling, heat your gravy until hot.

Step 10Remove the muffins from the muffin pan using a spatula or a butter knife to assist in removal.

Step 11Place the stuffin' muffins onto a warm place and cover with hot gravy. Garnish with a bit of cranberry sauce if desired.
