Ingredients

  • 1/2 stick butter, melted
  • 1/2 cup bread crumbs, seasoned
  • 1 large eggplant
  • 1 pound ground turkey
  • 3 tablespoons sofrito (spanish seasoning)
  • 1 package sazon (spanish seasoning)
  • 1/2 cup tomato sauce
  • THE BEST STUFFED EGGPLANT EVER

How To Make stuffed eggplant

  • Step 1
    TAKE THE EGGPLANT, CUT IT IN HALF LENGTH WISE. REMOVE THE PULP, AS MUCH AS POSSIBLE WITHOUT BREAKING THE SHELL. CUT THE PULP INTO SMALL PIECES. PUT ASIDE FOR NOW.
  • Step 2
    START COOKING THE MEAT, ADD THE TOMATO SAUCE, SAZON, & SOFRITO AND LET IT COOKED ON MED HEAT FOR 30 MINUTES. MAKE SURE THAT ONCE COOKED THERE'S NO LIQUID IN THE MEAT. NEXT ADD THE EGGPLANT PULP TO THE MEAT & LET IT COOK FOR ANOTHER 10 MINUTES.REMOVE FROM HEAT.
  • Step 3
    NOW TAKE YOUR EGGPLANT SHELLS AND FILL THEM WITH THE MEAT. ONCE FILLED MIX THE BREAD CRUMBS WITH THE BUTTER AND MAKE A PASTE THAT YOU WILL PLACE ON TOP OF THE MEAT. IF YOU LIKE YOU CAN PUT ANY KIND OF CHEESE ON TOP & PUT IN THE OVEN FOR A 10 MINUTES. REMOVE FROM OVEN, LET STAND FOR 10 MINUTES. DELICIOUS WITH WHITE RICE.
