How To Make stuffed eggplant

1TAKE THE EGGPLANT, CUT IT IN HALF LENGTH WISE. REMOVE THE PULP, AS MUCH AS POSSIBLE WITHOUT BREAKING THE SHELL. CUT THE PULP INTO SMALL PIECES. PUT ASIDE FOR NOW.

2START COOKING THE MEAT, ADD THE TOMATO SAUCE, SAZON, & SOFRITO AND LET IT COOKED ON MED HEAT FOR 30 MINUTES. MAKE SURE THAT ONCE COOKED THERE'S NO LIQUID IN THE MEAT. NEXT ADD THE EGGPLANT PULP TO THE MEAT & LET IT COOK FOR ANOTHER 10 MINUTES.REMOVE FROM HEAT.

3NOW TAKE YOUR EGGPLANT SHELLS AND FILL THEM WITH THE MEAT. ONCE FILLED MIX THE BREAD CRUMBS WITH THE BUTTER AND MAKE A PASTE THAT YOU WILL PLACE ON TOP OF THE MEAT. IF YOU LIKE YOU CAN PUT ANY KIND OF CHEESE ON TOP & PUT IN THE OVEN FOR A 10 MINUTES. REMOVE FROM OVEN, LET STAND FOR 10 MINUTES. DELICIOUS WITH WHITE RICE.
