stir fry essentials: asian veggie stir fry
I love this dish, and being a carnivore that’s saying a lot. The original recipe came from a friend who owned an Asian restaurant in San Francisco. Over the years, I’ve tweaked the original ingredients to suit my own cooking style, and this is the result. Whenever I serve this recipe, the bowls always come back empty, and that about sums it up. So, you ready… Let’s get into the kitchen.

Ingredients
- 1 1/2 cups long-grain white rice
- 2 tablespoons sweet butter, unsalted, or coconut oil
- 1/2 medium yellow onion, chopped
- 1 cup carrots, diced
- 1 cup edamame
- 1 cup peas
- 4 ounces bean sprouts
- 2 cups green cabbage, rough chop
- ADDITIONAL ITEMS
- - eggs, scrambled
- - tamari sauce
- - sesame oil
- - peanut sauce
- - toasted sesame seeds

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Cook the rice according to package direction; however, use 25% less water.

Step 4Add the butter to a large skillet, over medium heat.

Step 5Chef’s Note: This skillet need to be big enough to hold all the ingredients.

Step 6When the butter melts, and the foaming subsides, add the onions.

Step 7Cook until they soften and begin to brown, about 8 – 10 minutes.

Step 8Add the carrots, and cook for an additional 2 minutes

Step 9Add the edamame, peas, and rice, and cook for 1 minute.

Step 10Add the bean sprouts, and green cabbage, and cook for an additional 2 – 3 minutes.

Step 11Chef's Note: Reduce heat to medium-low, add about an ounce of water to the pan, then cover, and allow to steam for 2 – 3 minutes.

Step 13Place in bowls, and top with scrambled eggs, if using (the eggs really gives this dish added flavor), and sprinkle with some toasted sesame seeds. Serve with tamari sauce and sesame oil on the side, and maybe a bit of peanut sauce. Enjoy.
