Warm and comforting. I love this dish and it is quick and easy. My teenage daughter and I really enjoy making and sharing this on a lazy afternoon or during a late night chat.

Ingredients

  • 2 cans diced tomatoes (15 oz each)
  • 2 tablespoons sugar or splenda
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tablespoons butter
  • 1 cup baking mix
  • 6-8 tablespoons milk

How To Make stewed tomatoes with dumplings

  • Step 1
    In a large saucepan, combine the tomatoes, sugar, salt, pepper and butter. Bring to a boil over medium heat, stirring occasionally.
  • Step 2
    In a small bowl, combine biscuit mix and milk. Drop batter in 4-6 mounds onto the tomatoes. Reduce heat; cover and simmer for 10 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift cover while simmering).
  • Step 3
    This may sound like a strange dish, but it is very tummy soothing and soul satisfying. Enjoy!
