stewed okra and tomatoes

Surprisingly enough, my four year old loves this!!!

Ingredients

  • 2 packages frozen cut okra
  • 1 large white onion
  • 1 can large diced tomatoes
  • 1/2 tablespoon minced garlic
  • 1 cup water, hot
  • 2 - chicken bouillon cubes
  • 2 cups brown rice, cooked
  • 2 tablespoons vegetable oil

How To Make stewed okra and tomatoes

  • Step 1
    Pour vegetable oil into large pan and cook until oil is hot. Pour frozen okra into the skillet with the oil and fry until okra gets tender. Season okra to taste with salt and pepper (preferably garlic salt). When okra begins to brown and get tender pour in the diced tomatoes, garlic, onions, water and bouillion cubes. Heat to boiling. Turn down the fire when the mixture begins to bubble. Let simmer for about 20 minutes stirring often. Serve dish over cooked brown rice.
