    chopped onions
  • 1/2 cup
    chopped celery
  • 1/2 cup
    chopped green pepper
  • 2
    cloves of garlic,minced
  • 2 cup
  • 3 tbsp
    chopped green onions

    salt and pepper to taste

How to Make squirrel jambalaya


  1. brown the squirrels in a dutch oven in about 1/2 cup hot oil. add the onions celery,green pepper and garlic and cook until the vegetables are tender.add 3 1/2 cups water,rice,green onions,salt and pepper,then cover. simmer for about 1 hour or until the squirrel is tender.
