Ingredients

  • DRESSING
  • 2 tablespoons rice vinegar
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 1/4 cup vegetable oil
  • 2 cloves garlic, minced
  • BOWL
  • 1 cup cooked drained and cooled cellophane noodles
  • 1/4 head red cabbage, cored and chopped small
  • 1 fresno chili, seeded and minced
  • 1 carrot, shredded
  • 1/2 red bell pepper, diced small
  • 1/2 cucumber, cut into match sticks
  • 1/2 cup roasted chopped nuts
  • 2 tablespoons basil, chopped, plus more for garnish

How To Make spring roll noodle bowl

  • Step 1
    Mix the ingredients for the dressing together in a large bowl.
  • Step 2
    Add the bowl ingredients to the dressing and mix well.
  • Step 3
    Divide between two bowls and garnish with basil leaves.
