Ingredients For spring lamb shank

  • 1/2 c
    olive oil
  • 4
    lamb shanks
  • 1 lg
    chopped onion
  • 1 tsp
    oregano
  • 1 Tbsp
    rosemary
  • 3
    cloves garlic
  • 1 1/2 c
    chicken broth
  • 6
    peeled and cut up carrots
  • 4 lg
    peeled and quarted potatoes
  • 1 c
    peas
  • 1 c
    green beans
  • juice of a lemon
  • 1 c
    white wine

How To Make spring lamb shank

  • 1
    poke some Garlic in the shanksSprinkle with olive oil, oregano,rosemary, salt and pepper. bake at 400 degreese for 30 minutes. Then lower the heat to 325 degrease.Simmer for 3 hours. After one hour of cooking time , add the broth, lemon, and some rind, water and wine.After 2 hours of cooking add the potatoes and the carrots. 15 minutes fe for serving add the beans and the peas. Bast the lamb as needed.
