spinach, tomatoes, and sausage in spaghetti squash
My daughter, Ashten, shared this recipe with us, and I added the roasted red peppers and Italian sausage. You can omit the sausage and make this a totally vegetarian meal!

Ingredients
- 1-2 spaghetti squash, depending on size
- olive oil, extra virgin
- salt, to taste
- pepper, to taste
- 5 ounces fresh baby spinach
- 8 - 10 ounces cherry tomatoes
- 2 tablespoons minced garlic
- 2 - Italian sausage links, cut into coins
- 1/2 jar roasted red peppers, chopped (optional)
- 6 ounces cream cheese, cubed
How To Make spinach, tomatoes, and sausage in spaghetti squash

Step 1Preheat oven to 400 degrees F.

Step 2Cut squash lengthwise. Remove seeds and discard. Coat with olive oil, salt, and pepper.

Step 3Turn the cut side down on a baking tray lined with foil or parchment. Bake for 20 mins (or until tender).

Step 4Turn the squash over. You can fluff the strands a little bit at this point.

Step 5While the squash bakes, mix the spinach, tomatoes, olive oil, red peppers, and garlic in a large bowl to thoroughly coat the spinach. Mix in cooked sausage.

Step 6Top the spaghetti squash with the spinach mixture.

Step 7Then top with the cream cheese cubes.

Step 8Bake for about 20 minutes or until cream cheese starts to get melty and golden.
