spinach sausage quiche (vegetarian)

Makes 4 quiche unless you use deep dish pie crust then you will have enough for 3 quiche. I have to come up with a good vegan one as I'm allergic to cheese but I so enjoyed this one while I could.

Ingredients

  • 4 tablespoons butter
  • 2 packages mushrooms (sliced)
  • 1/2 teaspoon season all
  • 2 packages 10 ounce frozen spinach (cooked & drained)
  • pinch of sea salt
  • 4 teaspoons onion powder
  • 2 tablespoons garlic powder
  • 2 packages morningstar veggie sausage links (mashed)
  • SAUTE THE ABOVE
  • 6 cups swiss cheese (grated)
  • 6 - eggs. lightly beaten
  • 4 tablespoons mckays instant seasoning & broth (chicken style)
  • 16 ounces evaporated milk
  • 4 - unbaked pie shells

How To Make spinach sausage quiche (vegetarian)

  • Step 1
    In a large frying pan, saute mushrooms in butter until cooked well and have shrunk in size. Add season all when the mushrooms are almost done. NOTE: add a little water if they get too dried out before shrinking.
  • Step 2
    Add spinach, sea salt, onion powder and garlic powder. Saute for about 2 min.
  • Step 3
    Add mashed up sausage links and mix well.
  • Step 4
    In a separate bowl combine grated Swiss cheese, eggs, McKays Imitation Chicken Seasoning & Broth, evaporated milk. Mix well.
  • Step 5
    Combine sauteed ingredients to cheese mixture and mix well.
  • Step 6
    Pour into 3 or 4 unbaked pie shells
  • Step 7
    Bake at 325 for 1 hour and 15 minutes.
