This recipe is so delicious. It is an old recipe and I have had it for a very long time. This is a fast recipe and my husband will suggest it if we are going out for the evening. He loves all the ingredients in the recipe and I don't have to be in the kitchen cooking for a long period of time.

Ingredients

  • 8 ounces whole-wheat pasta
  • 2 tablespoons olive oil
  • 1 - minced garlic clove
  • 1 pound sliced mushrooms
  • 6 ounces cream cheese
  • 1/2 cup milk
  • 2 quarts lightly packed spinach
  • 1/2 tablespoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 cup grated parmesan cheese (on the side)

How To Make spinach mushroom pasta

  • Step 1
    In a large pot, boil 8 oz. whole-wheat pasta and cook according to package directions. When cooked transfer to a large serving bowl.
  • Step 2
    While pasta is cooking heat 2 tbsp. of olive oil in a large frying pan, add one minced garlic clove and one lb. of sliced mushroom and cook until softened, about five minutes.
  • Step 3
    Add 6 oz. of cream cheese and 1/2 cup milk and cook, stirring often, until boiling.
  • Step 4
    Stir in two qts. lightly packed spinach and cook until wilted, takes about 3 minutes.
  • Step 5
    Season with the salt and pepper and pour over pasta.
  • Step 6
    Season with parmesan cheese (which is served on the side)
