    1 prepared Pie Crust
    7 eggs beaten well
    1 pint half-half
    Handful of sun dried tomatoes sliced
    Half medium leek sliced thin quarters
    2 large serving spoons of pitted Kalamata Olives, rough chopped
    About 1 cup fine grated parmesan
    About ¼ cup olive oil
    About 2 cups whole leaf fresh young spinach
  • 2Preparation
    Place the prepared pie crust in an oiled 8” x 8” glass baking dish,
    Preheat oven 325 degrees Fahrenheit
  • 3Directions
    Mix eggs, add cream, add parmesan and whip well with hand whip with large wire wisk. Add all other ingredients and mix well with large spoon.
    Bake about 1 hour
