These are so delicious and I love the taste of the Poblano pepper. I used to make this recipe using bell pepper. Either way you choose,it is delicious. I found this recipe on the box of Sucess Boil in Bag brown rice.

Ingredients

  • 1 pkg
    bag sucess brown rice
  • 1/4 c
    parmesan cheese, grated
  • 1 pkg
    8oz cream cheese
  • 1 lb
    hot italian sausage(bulk or casings removed) cooked.
  • 4
    poblano peppers, sliced lenghtwise and seeded
  • 8
    thin sliced bacon
  • ·
    salt and pepper, just a pinch or to your liking

How to Make SPICY STUFFED POBLANO PEPPERS

Step-by-Step

  1. Prepare rice according to package directions.
  2. Preheat oven to 400 degrees.
  3. in a large bowl cobine the cheeses, rice and cooked sausage. Mix well.
  4. Stuff each pepper half with mixture and wrap with a slice of bacon.
  5. Place peppers on a large baking sheet. Bake 25 min. then place under broiler for about 5 min. or until bacon is crisp.
