This is a quick and easy recipe which would work well with a nice green salad and rolls on the side for a vegetarian meal. You could also make it a meat meal by adding grilled chicken breast strips.

Ingredients

  • 1 medium eggplant, peeled and diced
  • 1 medium onion, diced
  • 1 jar medium salsa (15 oz.)
  • 1 can beans, such as navy, garbanzo or cannelini, (15 0z), drained
  • 1 teaspoon italian seasoning
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons vegetable oil

How To Make spicy eggplant delight

  • Step 1
    Heat oil in large pan over medium heat. Add onion and saute until translucent.
  • Step 2
    Add diced eggplant and chicken broth and cook until eggplant is tender, stirring occasionally. You may need to add a little more broth if it gets dry.
  • Step 3
    Add beans, salsa and Italian seasoning and cook until bubbly.
  • Step 4
    Enjoy!
