This is a quick and easy recipe which would work well with a nice green salad and rolls on the side for a vegetarian meal. You could also make it a meat meal by adding grilled chicken breast strips.

Ingredients

  • 1 medium
    eggplant, peeled and diced
  • 1 medium
    onion, diced
  • 1 jar(s)
    medium salsa (15 oz.)
  • 1 can(s)
    beans, such as navy, garbanzo or cannelini, (15 0z), drained
  • 1 tsp
    italian seasoning
  • 1/2 c
    low-sodium chicken broth
  • 2 Tbsp
    vegetable oil

How to Make Spicy Eggplant Delight

Step-by-Step

  1. Heat oil in large pan over medium heat. Add onion and saute until translucent.
  2. Add diced eggplant and chicken broth and cook until eggplant is tender, stirring occasionally. You may need to add a little more broth if it gets dry.
  3. Add beans, salsa and Italian seasoning and cook until bubbly.
  4. Enjoy!
