This is a quick and easy recipe which would work well with a nice green salad and rolls on the side for a vegetarian meal. You could also make it a meat meal by adding grilled chicken breast strips.

Ingredients
- 1 medium eggplant, peeled and diced
- 1 medium onion, diced
- 1 jar medium salsa (15 oz.)
- 1 can beans, such as navy, garbanzo or cannelini, (15 0z), drained
- 1 teaspoon italian seasoning
- 1/2 cup low-sodium chicken broth
- 2 tablespoons vegetable oil
How To Make spicy eggplant delight

Step 1Heat oil in large pan over medium heat. Add onion and saute until translucent.

Step 2Add diced eggplant and chicken broth and cook until eggplant is tender, stirring occasionally. You may need to add a little more broth if it gets dry.

Step 3Add beans, salsa and Italian seasoning and cook until bubbly.
