1 mediumeggplant, peeled and diced
1 mediumonion, diced
1 jar(s)medium salsa (15 oz.)
1 can(s)beans, such as navy, garbanzo or cannelini, (15 0z), drained
1 tspitalian seasoning
1/2 clow-sodium chicken broth
2 Tbspvegetable oil
How to Make Spicy Eggplant Delight
- Heat oil in large pan over medium heat. Add onion and saute until translucent.
- Add diced eggplant and chicken broth and cook until eggplant is tender, stirring occasionally. You may need to add a little more broth if it gets dry.
- Add beans, salsa and Italian seasoning and cook until bubbly.
