This stew would typically be served with injera. I imagine it would also be good over rice or couscous.

Ingredients

  • 2 pounds beef (top or bottom round)
  • 2 cups red onion or shallots, thinly chopped
  • 1/2 cup berbere (hot red chili powder)
  • 1/2 cup nitir kebe (ethiopian spiced clarified butter)
  • 2 cloves garlic, peeled and minced
  • 1/4 teaspoon black cumin
  • 1 teaspoon garlic powder
  • 1/4 cup red wine
  • 1.2 teaspoons cardamom powder
  • 5 cups water or beef broth
  • - black pepper to taste
  • - salt to taste

How To Make spicy beef stew (yesiga wot)

  • Step 1
    Cut the meat into the desired size and shape.Cook in batches in a large skillet until browned on all sides.Set aside.
  • Step 2
    Add 2 tablespoons of the water to the skillet. Add the onion. Cook until the onion is golden brown and soft, adding 2 tablespoons of water at a time (you will use about 1 cup water). This should take about 10 minutes.
  • Step 3
    Add a cup of water to the cooked onion. Add the berbere, garlic, black cumin, garlic powder, red wine, and stir well. Add the Nitir Kebe and mix it very well. Simmmer for 10 minutes.
  • Step 4
    Add the meat to the sauce. Cook for another 10 minutes.
  • Step 5
    Add 3 cups water to the sauce and stir. Cook until the meat is soft and tender and the stew is thicker, about 20 minutes.
  • Step 6
    Add the cardamom powder, black pepper, and salt. Mix well and simmer for 5 minutes. Enjoy!
