    potato, peeled and sliced thin
  • 1/2
    onion, sliced thin
  • 1/2
    green pepper, sliced thin
  • 1/2
    red pepper, sliced thin

    olive oil
  • 6
    eggs, beaten
  • salt/pepper

How To Make spanish chorizo & potato frittata

    In a skillet, place the olive oil and potatoes, on low about 5 mins.

    add in the onions, peppers and chorizo toss gently with the potatoes and saute another 5 mins.

    meanwhile, preheat oven to 325.

    add in the beaten eggs, salt & pepper.

    bake for a.bout 20 mins, until eggs are set and cooked through
